Honey Caramel Popcorn Balls

1 cup popcorn kernels

4 TBS butter

1 TBS molasses

1/3 cup honey

3 TBS maple syrup

1/2 tsp salt

1 tsp vanilla

1/2 tsp baking powder

1 tsp cinnamon (optional)

Pop the popcorn. Put in a big bowl.

In a small saucepan add next 5 ingredients. Heat on medium high heat until it come to a rolling boil. Once it comes to a rolling boil, boil for 3 minutes, stirring and being careful not to burn. Remove from stove and stir in vanilla, baking powder and cinnamon, if using. Continue to stir so that the mixture does not overflow your pan. Make sure the baking powder is all stirred in.

Pour mixture over popcorn. Stir to combine. Don’t worry if it doesn’t cover all of it.

Let it cool until it sticks together when you squeeze a ball in your hands. Butter your hands and shape balls. (It won’t stick when it’s too hot.)

10 to 14 balls from one batch, depends how big you make the balls.
